Soggy, bitter quinoa almost always comes down to two skipped steps: rinsing and resting.
Rinse it well
Quinoa has a natural coating called saponin that tastes bitter. Rinse it in a fine sieve under cold water for thirty seconds.
Use less water than you think
One part quinoa to one and three-quarter parts water gives separate, fluffy grains.
Rest, then fluff
Simmer covered for twelve minutes, take the pan off the heat and leave the lid on for five more. Fluff with a fork and spread on a tray to cool if you are meal prepping.
