Method

Ready in 25 mins

  1. Heat the oven to 220°C (425°F) and line a large tray.
  2. Toss broccolini with half the oil, salt and pepper. Roast 5 minutes.
  3. Add salmon, brush with lemon, garlic and the remaining oil.
  4. Roast 10 minutes more, then fold in spinach until just wilted.

Notes & tips

Line the tray with baking paper and the only thing left to wash is a knife.

Make it your own

  • Swap broccolini for green beans or asparagus
  • Add a pinch of chilli flakes to the dressing
  • Serve over rice or new potatoes

Storage

Best eaten fresh. Leftover salmon flakes beautifully into a next-day salad.
