Our Story

SWP Butcher Shop has stood on the same corner since 1994. Whole animals come in through the back on Tuesday mornings, and everything you see in the case was broken down in the room behind it.

Buying the whole animal means we are responsible for all of it, not only the popular cuts. That is why the case has shanks and marrow bones next to the ribeye, and why the sausage recipes change with what came off the block that week.

What that means at the counter

  • Nothing is pre-portioned. Tell us the thickness and we cut it while you wait.
  • Bones, fat and trim are bagged separately at no charge if you want them.
  • Every parcel is weighed twice and labelled with your name and the cooking times.
  • If we do not have it in the case, we will tell you when it is coming in.

We buy from five farms, all within a day’s drive, and we can name the one every cut came from. Ask — we would rather answer than have you guess.

How we work

Thirty years of the same four steps

Dry aging is mostly patience and airflow. Primals go on the rack whole, uncovered, and stay there until the crust forms and the flavour concentrates. Then we trim back to clean meat and cut what you ask for.

    Bone-in ribeye and striploin, racked with space on every side.

    Air keeps moving

    Fans run constantly so the surface dries evenly instead of sweating.

    Crust does the work

    The outer layer hardens and seals, while the inside changes texture.

    Trimmed and cut

    We take the crust back to clean meat and cut steaks to your thickness.
