Most people do not skip a healthy lunch because they lack willpower. They skip it because at 12:30 on a Wednesday there is nothing ready. One focused hour on Sunday fixes that, and it does not involve five identical boxes of chicken and broccoli.
The formula: one grain, two proteins, three vegetables
Cook one batch of a whole grain, two different proteins and three vegetables prepared in different ways. Mixing and matching gives you a different lunch every day from the same short shopping list.
- Grain: brown rice, quinoa, farro or wholewheat couscous
- Protein: roast chicken thighs, baked tofu, chickpeas or hard-boiled eggs
- Vegetables: one roasted tray, one raw and crunchy, one quick-pickled
Sauces do the heavy lifting
Two jars of sauce turn the same ingredients into different meals. A lemon-tahini dressing and a peanut-lime sauce take five minutes each and keep for the week.
Store components separately and assemble the night before. Dressed salads wilt; dressed grains improve. Your future self, the one at 12:30 on Wednesday, will thank you.
