Soffit is not trim. It is half of the ventilation path that keeps your attic from cooking the underside of the roof deck in summer and condensing moisture onto it in winter. Vented soffit lets air in at the eave, ridge vent lets it out at the top, and the roof above lasts the length of its warranty instead of ageing early. Doing the siding at the same time as the roof also means one warranty covers the roof-to-wall junction.
