Properly stored, honey keeps practically forever. Archaeologists have found edible honey in Egyptian tombs. Your pantry just needs to follow three rules.
- Keep the lid tight. Honey absorbs moisture from the air, and moisture is the only thing that can spoil it.
- Skip the fridge. Cold speeds up crystallisation. A cupboard at room temperature is ideal.
- Keep it away from heat. Next to the stove, the aroma fades.
Always use a clean, dry spoon — a crumb of toast or a drop of water is all it takes to start fermentation.
