A run sheet is a single timing sheet shared with every vendor and with the kitchen. It names who is speaking, for how long, and what is on the pass at that moment. When the chair overruns by six minutes, the kitchen already knows to hold the mains rather than sending them into an empty room.
Build in a fifteen-minute buffer before the awards or the auction. You will use it, and nobody will notice you planned for it.
