Honey never dissolves in cold tea — it sinks to the bottom and sits there. The trick is to sweeten the tea while it is still warm, then chill it. Clover honey is our favourite here: buttery, gentle and never overpowering.
Ingredients
- 4 black or green tea bags
- 1 litre freshly boiled water
- 3 tbsp Spring Clover Honey
- 2 limes, juiced, plus slices to serve
- Plenty of ice and a few mint leaves
Method
- Steep the tea bags for 4 minutes, then remove them.
- While the tea is still warm, stir in the honey until fully dissolved.
- Add the lime juice and leave to cool, then chill for at least an hour.
- Serve over ice with lime slices and mint.
Swap the clover for wildflower honey in late summer for a brighter, fruitier glass.
