Canapes passed through the foyer and bar while the hall is reset behind closed doors — the hour that hides the room turnaround. Eight canapes per guest, half of them warm, circulated over ninety minutes by staff who know which tray has the nut-free version. The bar opens with the first tray and closes thirty minutes before the music stops.
